I'M A NEWBIE!!!!!!!

It's the beginning of a new year and I thought I should get with the modern world and try this blogging thing out for myself.  My oldest daughter has a blog and she has encouraged me to do one as well. I hope to impart some of the wisdom I've gained over my 40 something years of living.
 In my blogs I will share "HELPFUL, HEALTHFUL HINTS" on how to live a "healthy lifestyle"  This will NOT be a blog about losing weight BUT it will be one about being healthy, in every area of life. God, Family, Friends and Food!!!  

So I will be sharing some recipes......probably a lot of recipes. My recipes will be a combination of  Nourishing Traditions  (good fats, fermented food) along with Paleo.  Which I do believe you will find to be quite tasty.  So come along try some recipes....be brave though, the fermented foods don't always sound good but believe me they are .

Here are a couple recipes to whet your appetite.

Huckleberry Almond Muffins ( I make these weekly)

3 cups almond flour                          2 large eggs (free range, organic, no soy feed)
1 stick butter, melted                        1/3 cup coconut sugar or 1/4 cp maple syrup or honey
1 tsp baking soda                             2 tsp pure vanilla
pinch celtic sea salt                           1 cup fresh/frozen huckleberries/blueberries                       

Preheat the oven to 300 degrees.  Line standard muffin tins or "grease" them with butter or coconut oil.  
In a food processor, puree almond flour, eggs, butter, baking soda, vanilla, coconut sugar, salt.  Transfer to large bowl and stir in your berries.  Scoop into prepared tins. Bake about 40 minutes or till golden.  Enjoy!!  These do freeze well.

RAW FUDGE

1/3 CUP RAW HONEY
1/3 CUP COCONUT CREAM CONCENTRATE
1/3 CUP ORGANIC COCOA.

Put in saucepan.  Heat on low stirring to combine and melt.  Pour into buttered individual ramekins.  cool in fridge, top with berries and enjoy.

As I'm finishing this up my "dog-son" Jackson and "grand-dog" Tucker came in which reminded me to say....our pets are part of our family too so make sure to give them nummy things like melting coconut oil and drizzling it on their food or adding the bacon grease to their kibble.  Jackson has part of my breakfast every morning.  YES I am one of THOSE pet owners.  lol
